A few weeks ago I had this idea to combine two of my favorite things: sourdough Neapolitan pizza and juicy tender meatballs. The results were impressive. The fragrant smell and taste of sourdough pairs incredibly well with the meatballs in sauce. In this recipe, I also used a method called Auolyse, which makes the dough kneading extremely easy. Let's bake together.

For the Pizza:
00 Flour 500 g
Water 380 g
Sourdough Starter 100 g
Salt 14 g
Olive Oil 14 g
For the Meatballs:
Fresh Breadcrumbs 100 g
2 TBSP Milk
500 g Ground Veal
100 g Parmigiano
1 Garlic Clove
25 g Fresh Parsley

2 Tbsp Olive Oil

You can keep it outside the fridge. But the rule of thumb is to use the starter at its peak, always! :)

I've always wanted to ask. What's your thought process on using that paddle attachment rather than the dough hook. Do you develop gluten faster?
Yes, way faster. Kitchenaid is not designed to mix high hydration doughs. The more you keep the dough mixing, the more it will heat up. So the flat beater helps speed up the process without heating up the dough too much!

Thanks for amazing video - just a few questions here: 1) Do you pre-heat the oven, or not? 2) When cooling down, do you take focaccia immediatelly out of blue steel pan on a rack or not? 3) How long do you need to wait till cooling down? (circa) 4) How to adjust cooking time and temperatures, when cooking in a ceramic pan, insted of blue steel pan (I do not have a blue steel pan of that size :( ) Thank you so much, your videos and recipes are amazing <3 I love them!
